After an epic journey of learning, eating and drinking at Craft Day Out last weekend, we’ve been busy focussing on our recently launched in-house classes, masterclasses and demo’shere The Craft & Co. So if you’re keen to learn more, then check out the current listings on offer below…

First up…our cheese making classes are held on Wednesday evenings (6pm-9pm), and will be focussing on making haloumi and ricotta. Classes include a custom pairing menu of same-style cheeses made on the night with wine/beer/spirits selected by our expert cheesemaker.

Or LEARN how to make traditional salami with this informative class held by our collaborative expert meatsmiths. Classes held are also held on Wednesday evenings (6pm-9pm), and will cover how to make salami, touching on sausage making, and discuss the vast varieties that can be produced by slightly altering methods. Take home an information booklet of what is covered on the day and have a go at making it yourself!

For those that really want to get familiar with the salami making process, we are also holding some detailed masterclasses on the craft. These thorough hands-on masterclasses held on Saturdays (from 10am-4pm) will go through how to trim, cut, mix, mince and fill various salumi. Whilst you will not be able to take home with you what has been produced, we would like to invite you back once the salumi have been aged/cured. We will demonstrate the key basics needed on preparing other cuts for curing and dry-aging i.e; capocollo, pancetta and prosciutto. We’ll also show you how to deconstruct and bone out a pig, take you through the critical prepping, salt-curing and air-drying stages.

The GREAT news is that we have also planned some FREE interactive demonstrations on Sundays (from 12pm-3pm) over the next few months too – we’ll be making passata, wine, olive oil and salami and anyone can join in on the fun simply by registering via the hyperlinks provided.
