WHAT IS…SOLERA AGED WHISKY?
Solera is a process for ageing liquids such as Whisky, by fractional blending in a way that the finished product is a mixture of multiple ages, with the average age gradually increasing as the process continues over many years.
Our Whisky is made with a subtle range of dark & light malted grains which are double pot distilled, then matured in selected small charred Oloroso Sherry casks & a range of specialty cherry & acacia vats.
This process creates a Whisky that is complex in aromatics of pecan, ripe banana & heavily toasted coffee. Rich & clean golden amber to the eye, the palate similarly delivers hints of stewed quince, burnt orange & dried raisins, all balanced by a long supple finish of toffee & toasted mocha.
